  Corn & Black Bean Badass Salsa

  1 can,15 oz, whole kernal corn, drained
1 can,15 oz, black beans, rinsed & drained
1 medium sweet red or green pepper, chopped
1 medium tomato, seeded & chopped
6  green onions, chopped
1/2 cup red onion, chopped
1  jalapeno pepper, seeded & finely chopped
1  garlic clove, minced
3/4 cup Italian salad dressing
1 tablespoon minced fresh cilantro or parsley
1 tablespoon lime or lemon juice
3/4 teaspoon hot pepper sauce
1/2 teaspoon chili powder
 
 

In large bowl, combine first 8 ingredients.

In small bowl, combine remaining ingredients.

            --pour over corn mixture & toss--

Cover and refrigerate for at least 6 hours or overnight.

 

Serve by itself, with tortilla chips, or as a filling for chicken wraps.
