Strawberry Muffins |

1/4 Cup Canola Oil
1/2 Cup Milk
1 Whole Egg
1/2 tsp Salt
2 tsp Baking Powder
1/2 cup Sugar
1 1/2 cups All Purpose Flour
1/4 cup brown sugar
1 tsp Vanilla
1 TBLS Cinnamon
1 Cup Chopped Strawberries

- Preheat overn to 375.
- Grease a 8 cup muffin tin or use liners.
- In a small bowl combine oil, milk, vanilla, and egg.
- In a large bowl combine flour, salt, baking powder, sugar, brown sugar, and cinnamon.
- Toss stawberries to coat with flour mixture, then add the milk mixture to the large bowl and combine gently.
- Fill muffin cups.
- Sprinkle tops with sugar.
- Bake at 375 for 25 minutes or until the tops bounce back. Cool 10 minutes and remove from pan.
