Pork with Blueberry Herb Sauce |

1 garlic clove, minced
1 tsp. pepper
1/2 tsp. salt
1/8 tsp. cayenne pepper
4 boneless pork loin chops (6 oz each)
2 cups blueberries
1/4 cup packed brown sugar
2 Tbsp. minced fresh parsley
1 Tbsp. balsamic vinegar
2 tsp. butter
1 tsp. minced fresh thyme or 1/4 tsp. dried thyme
1 tsp. fresh sage or 1/4 tsp. dried sage leaves

<ol><li>In a small bowl, combine the garlic, pepper, salt and cayenne; sprinkle over pork.</li><li>In a large ovenproof skillet coated with cooking spray, brown pork chops. Bake uncovered at 350<sup>o</sup> for 10-15 minutes or until a meat thermometer reads 160<sup>o</sup>. Remove pork and keep warm.</li><li>In the same skillet, add the remaining ingredients. Cook and stir over medium heat until thickened, about 8 minutes. Serve with pork.</li></ol><p><strong>Nutritional Facts:</strong> 1 chop with 1/4 cup sauce equals 343 cal, 12g fat, 87mg cholesterol, 364mg sodium, 25g carb, 2g fiber, 33g protein.</p>
