  "Cake Balls"

  1 prepared box of cake mix (any flavor)
1/2 - 3/4 regular sized tub of frosting (flavor to complement cake choice)
few bags  Wilton candy melts
  sticks (if you want the "cake balls" on a stick)
  sprinkles, candies, mini m & m's, etc to decorate
 
 
  1. Prepare a boxed cake mix as directed on box.  When I made them, I baked it in a 13 x 9 pan.  Let cake completely cool.
  2. If there are any hard / crispy edges on the cake, pull them off and throw away or eat them.
  3. In a large bowl use your hands (I wear disposabe gloves for this because it gets very messy!)  to crumble the prepared cake. 
  4. Once cake is completely crumbly, add 1/2 - 3/4 of a regular sized tub of frosting.  Mix the cake and frosting completely.
  5. Mixing the cake and frosting creates a finished product that is moist and flavorful! 
  6. Next, get out a jelly roll pan (or any large pan that will fit in your freezer).  Do not grease the pan.  Roll the cake/frosting mixture in your hand to create a bite-sized ball and place on the jelly roll pan.  The size of each ball is up to you, just remember that when you bite into a finished "cake ball", the larger it is the more likely it is to fall apart and be awkward and messy to eat. 
  7. Once all the cake mixture is rolled into balls, insert sticks into the middle of the ball.  I used Wilton's sticks that I picked up at Michaels.
  8. Place the pan in the freezer overnight.  
  9. Melt the Wilton chocolate as directed on packaging.  I tried both methods (microwave and stove top) and found melting the chocolates on the stove using a double boiler to be the best way to get nice, smooth chocolate.
  10. Coat each "cake ball" in whatever chocolate flavor you have chosen.  Remember:  since you are dipping cold cake in hot chocolate, the chocolate will harden very quickly.  Be prepared to sprinkle or add toppings immediately after coating in chocolate.  Also, note that if the "cake balls" sit out and become too warm, they will become flimsey and can fall off the stick while trying to coat them with chocolate.  It is best to coat in chocolate when the cake is cold.
  11. Once the "cake balls" are completed and all the chocolate is hardened, if you choose, you can individually wrap them, display on a tray or simply put them in a tupperware container.

    -Chocolate cake with chocolate frosting

               -outter shells:  mint chocolate, dark chocolate, vanilla

    -Funfetti cake with vanilla frosting

                -outter shells:   milk chocolate, dark chocolate, vanilla
