  Mediterranean Quinoa Salad

  1 cup dry quinoa
2 cups water
1-2 cups cherry tomatoes - sliced
1 - 2  green or red pepper - chopped
1  cucumber - peeled and chopped
1/2  red onion - chopped
1/2 cup kalamamta olives - sliced
3/4 cup feta cheese
1/3 cup extra virgin olive oil
2 tablespoon balsamic vinegar
1 tsp. dry oregano
1/2 tsp. salt
1/4 tsp. black pepper
 
  <blockquote><p>Combine the water and quinoa in a medium sized pot and bring to a boil.&nbsp; Reduce heat to simmer and let cook for about 15 minutes, or until the quinoa has absorbed all the water.&nbsp; Fluff with a fork and set aside to cool.&nbsp; In a large bowl, combine all chopped veggies and feta.&nbsp; Add quinoa and spices and mix well.&nbsp; Drizzle olive oil and balsamic on top.&nbsp; Toss everything together.&nbsp; Serve immediately or store in the fridge until serving.</p></blockquote>
