  Mediterranean Quinoa Salad

  1 cup dry quinoa
2 cups water
1-2 cups cherry tomatoes - sliced
1 - 2  green or red pepper - chopped
1  cucumber - peeled and chopped
1/2  red onion - chopped
1/2 cup kalamamta olives - sliced
3/4 cup feta cheese
1/3 cup extra virgin olive oil
2 tablespoon balsamic vinegar
1 tsp. dry oregano
1/2 tsp. salt
1/4 tsp. black pepper
 
 

Combine the water and quinoa in a medium sized pot and bring to a boil.  Reduce heat to simmer and let cook for about 15 minutes, or until the quinoa has absorbed all the water.  Fluff with a fork and set aside to cool.  In a large bowl, combine all chopped veggies and feta.  Add quinoa and spices and mix well.  Drizzle olive oil and balsamic on top.  Toss everything together.  Serve immediately or store in the fridge until serving.
