  Corn and Sausage Chowder

  3 Tbsp Butter
2/3 cup Chopped onion
1/4 cup Celery *
6 Tbsp Flour
5 cups Chicken broth *
1 cup Potatoes *
1 Lb Frozen corn
1 1/4 cups Sliced sausage *
1 1/2 cups Heavy cream *
1/4 tsp Salt
1/8 tsp Pepper
  Liquid smoke
 
 

Melt butter in a big saucepan then add onions and celery.  Cook until veggies are tender, but not brown.  Add flour and cook 4 to 5 minutes, stirring so flour doesn't burn (Do not brown.)  Add broth and mix well (it works best to start with adding a little broth and wisk together, slowly adding the rest of the broth.)  Add the potatoes and simmer for about 20 minutes or until veggies are tender.  Add corn and sausage and simmer for an additional 20 minutes.  Stir in heavy cream, salt, and pepper.  Add liquid smoke to taste.

  • Celery= 2 stalks
  • Chicken broth= 7 cups (or 4 cans)
  • Potatoes= 2 medium red
  • Sausage= 2/3 of the "U" link
  • Heavy cream= 2 small containers (1 pint)
