  Corn and Sausage Chowder

  3 Tbsp Butter
2/3 cup Chopped onion
1/4 cup Celery *
6 Tbsp Flour
5 cups Chicken broth *
1 cup Potatoes *
1 Lb Frozen corn
1 1/4 cups Sliced sausage *
1 1/2 cups Heavy cream *
1/4 tsp Salt
1/8 tsp Pepper
  Liquid smoke
 
  <p>Melt butter in a big saucepan then add onions and celery.&nbsp; Cook until veggies are tender, but <strong>not</strong> <strong>brown</strong>.&nbsp; Add flour and cook 4 to 5 minutes, stirring so flour doesn&#39;t burn (<strong>Do not brown.)</strong>&nbsp; Add broth and mix well (it works best to start with adding&nbsp;a&nbsp;little broth and wisk together, slowly adding the rest of the broth.)&nbsp; Add the potatoes and simmer for about 20 minutes or until veggies are tender.&nbsp; Add corn and sausage and simmer for an additional 20 minutes.&nbsp; Stir in heavy cream, salt, and pepper.&nbsp; Add liquid smoke to taste.</p><p><strong>*</strong> Lisa&#39;s adjustments for soup vs. chowder</p><ul><li>Celery= 2 stalks</li><li>Chicken broth= 7 cups (or 4 cans)</li><li>Potatoes= 2 medium red</li><li>Sausage= 2/3 of the &quot;U&quot; link</li><li>Heavy cream= 2 small containers (1 pint)</li></ul>
