2-4 Cups Penne or mezzo penne - cooked
2 tsp. flour
1/2 tsp. dry mustard
1/2 tsp. cayenne
dash salt & pepper
1/8 tsp. nutmeg
1/4 cup sour cream
1 egg
1 cup half and half
1 cup heavy cream
1/4 cup onion pulp (sweet onion)
8 oz. shredded cheddar cheese
8 oz. shredded colby jack cheese
8 oz. pepper jack cheese (if you want to be brave, use the habanero one!)
Cubed french bread ( slightly saute in butter & garlic)

Preheat oven to 350. Cook pasta according to package directions. In a medium bowl, mix together flour, dry mustard, cayenne, salt and pepper, nutmeg, sour cream and egg. In a heavy pot, heat half and half, heavy cream, onion pulp, and cheeses. Heat and stir constantly until all cheese is melted. Place cooked pasta in a casserole dish. Add the seasoning mixture to the cheese mixture and pour over the pasta. Toss to coat pasta evenly. Top with french bread and bake for 35 minutes.
