  Amish Macaroni Salad

  1 Pound box Macaroni
3  Stalks Chopped celery
1 Small Chopped onion
1/2 Cup  Carrots shredded
1  Small Red pepper, chopped
2 TBls. Sweet pickle relish
3 or more  Hard boiled Eggs , chopped
 
 

Cook macaroni drain and set aside to cool.

In a large bowl stir together the eggs, onions, celery, red pepper, carrots and relish.

In a small bowl stir together:

2 Cups Miracle Whip

3 Tablespoons yellow mustard

3/4  Cup white sugar

1/4 tsp. Salt

2 1/4 white vinegar

3/4 tsp. Celery seed 

 Pour over the vegetables and stir.  Add macaroni and mix well. Cover and chill for at least 1 hour before serving.

 

Some recipes call for green pepper instead of red and some call for 2 cups of cheddar cheese. Another recipe called for a can of Eagle Brand milk.
