  Bacon, Spinach, Carmelized Onion Pasta

  6 oz penne pasta
4 oz bacon, chopped
1  large onion, diced
2 Tbsp butter
2 Tbsp brown sugar
1-2 cups spinach
  salt, pepper, garlic powder to taste
1/2 cup parmesan cheese, grated
 
 
  1. In a large skillet, add your bacon and cook for 1-2 mins until bacon is halfway done.
  2. While bacon is cooking start salted water to boil for pasta and cook pasta until al dente.
  3. In skillet with the bacon add the butter, brown sugar, salt, pepper, garlic powder, and onion; sautee until the onion becomes tender, and bacon starts to crisp up.
  4. Once the pasta is done, drain it, reserving about 1/2 cup of the pasta water.
  5. Add pasta and water to the skillet with the bacon, and onion mixture.
  6. Mix in the spinach and stir until tender
  7. Sprinkle with Parmesan before serving.
 
Note: You can make this a main dish by adding cooked chicken or sausage to the skillet in step 5. As a main dish alone this would serve about 3-4 people.
