Bacon, Spinach, Carmelized Onion Pasta |

6 oz penne pasta
4 oz bacon, chopped
1 large onion, diced
2 Tbsp butter
2 Tbsp brown sugar
1-2 cups spinach
salt, pepper, garlic powder to taste
1/2 cup parmesan cheese, grated

<ol><li>In a large skillet, add your bacon and cook for 1-2 mins until bacon is halfway done.</li><li>While bacon is cooking start salted water to boil for pasta and cook pasta until al dente.</li><li>In skillet with the bacon add the butter, brown sugar, salt, pepper, garlic powder, and onion; sautee until the onion becomes tender, and bacon starts to crisp up.</li><li>Once the pasta is done, drain it, reserving about 1/2 cup of the pasta water.</li><li>Add pasta and water to the skillet with the bacon, and onion mixture.</li><li>Mix in the spinach and stir until tender</li><li>Sprinkle with Parmesan before serving.<br /></li></ol><div> </div><div><strong>Note</strong>: You can make this a main dish by adding cooked chicken or sausage to the skillet in step 5. As a main dish alone this would serve about 3-4 people.</div>
