Broccoli Chedder Soup |

1/2 Cup Chopped Onion
1/2 Cup Butter or Margarine
1/2 Cup All-purpose Flour
1/2 tsp Salt
1/2 tsp Pepper
1 1/2 Cups Chicken Broth
3 Cups Milk
1 1/2 Cups Frozen Broccoli
1 1/2 Cups Fresh Broccoli, Chopped
1 Cup Shredded Cheddar Cheese
2 Cups Diced Velvetta Chunks

- In a medium-large pot, saute the onion in butter until tender.
- Stir in flour, salt and pepper. Cook until smooth and bubbly.
- Add broth and milk all at once. cook and stir frequently, until the mixture boils ad thickens.
- Add Broccoli and simmer stirring frequently.
- Once broccoli is heated and cooked through add Velvetta cubes to pot and stir until dissolved.
- Remove from heat adding 1/4c to 1/2c of Cheddar Cheese to mixture depending on thickness and cheese preference.
- Spoon into bowls and server with sprinkled cheddar cheese on top. Yields 4-6 bowls.
