  Broccoli Chedder Soup

  1/2 Cup Chopped Onion
1/2 Cup Butter or Margarine
1/2 Cup All-purpose Flour
1/2 tsp Salt
1/2 tsp Pepper
1 1/2 Cups Chicken Broth
3 Cups Milk
1 1/2 Cups Frozen Broccoli
1 1/2 Cups Fresh Broccoli, Chopped
1 Cup Shredded Cheddar Cheese
2 Cups Diced Velvetta Chunks
 
 
  1. In a medium-large pot, saute the onion in butter until tender.
  2. Stir in flour, salt and pepper. Cook until smooth and bubbly.
  3. Add broth and milk all at once. cook and stir frequently, until the mixture boils ad thickens.
  4. Add Broccoli and simmer stirring frequently.
  5. Once broccoli is heated and cooked through add Velvetta cubes to pot and stir until dissolved.
  6. Remove from heat adding 1/4c to 1/2c of Cheddar Cheese to mixture depending on thickness and cheese preference.
  7. Spoon into bowls and server with sprinkled cheddar cheese on top. Yields 4-6 bowls.
