  Blueberry Buckle (aka: Brickle)

  1/8 Cup Shortening
1  Egg
1/2 Cup milk
1 1/2 Cups All-purpose Flour
2 tsp Baking Powder
1/8 Cup Butter
1 or 2 tsp Vanilla
1/2 tsp salt
2 Cups Blueberries
1 1/4 Cup White Sugar Divided
1/3 Cup All-purpose Flour
1/2 tsp Cinnamon
1/4 Cup Butter, Softened
 
 
  1. Preheat oven to 375º. Grease one 8x8 inch pan.
  2. Cream together 3/4 cup sugar, shortening, 1/8c Butter, Vanilla, and egg
  3. In a seperate bowl mix together 1 1/c flour, baking powder, and salt.  Stir into sugar mixture, alternating with milk. Stir in blueberries. Pour into greased 8x8 pan.
  4. To make topping: Combine 1/2c sugar, 1/3 cup flour, cinnamon, and butter.  Sprinkle over cake batter.
