1 lb Ground Beef
1 egg
Salt & Pepper
1/2 Cup Minute Rice
1/4 Cup Onion
1 large can V8
3 - 4 Green Peppers

- Chop Onion finely and microwave in a little water to cook them.
- Make Meatball: mix ground beef, rice, cooked onion, a splash of V8, dashes of salt & pepper
- Brown meatballs in thin layer of oil in an electric skillet or large skillet
- Once meatbals are browned and firm on all sides add V8 and peppers. continue head to reduce liquid
- Take meatballs out once peppers are to desired tenderness
- Remove meatballs and add sour cream to mixture, stir.
- Add Corn starch and water if needed thicken sauce.
