  Philly Mashed Potatoes

  4  potatoes, chopped
1 (8 ounce) Package Cream Cheese
1  small onion, finely chopped
2  eggs, beaten
1 TBLS all-purpose flour
1/4 tsp salt
1/8 tsp pepper
3 ounces french-fried onions, crushed
 
 
  1. Preheat ove to 300 degrees.
  2. Bring a large pot of salted water to a boil.  Add potatoes and cook until tender but still firm, about 15 min.  Drain and mash.
  3. In a large mixing bowl combine mashed potatoes, cream cheese, onion, eggs, flour, salt and pepper.  Using and electric mixer, beat on medium speed for several minutes.  Spoon mixture innto a 1 1/2 quart casserole dish and top with crushed fried onions.
  4. Bake for 30-35 minutes
