2 Cups Flour
2 Tsp. Baking powder
1 1/2 Tsp Baking soda
1 Tsp Salt
2 Tsp Cinnamon
2 Cups Sugar
1 1/2 Cups Vegetable oil
4 Eggs
2 Cups Finely grated carrots
1 Cup Crushed pineapple, drained
1/2 Cup Nuts, chopped

Sift flour, baking powder, soda,salt and cinnamon. Take sugar, beat eggs in one at a time. Beat well. Add oil, carrots, pineapple and nuts. Add flour to mixture. Put in greased tube pan or bundt pan. Bake at 350 for 50 - 60 minutes. If convection oven 325 for 55 minutes. Cream Cheese Icing: 1 stick of butter softened,softened 8 oz. cram cheese, 2 tsp. Vanilla, 3 cups confectionary sugar. Beat together butter and cream cheese at medium speed. Beat in vanilla and sugar. Topping: Mix 1/4 cup finely chopped walnuts and 2 Tablespoons firmly packed brown sugar. Sprinkle on frosting and enjoy! This recipe was from my friend Janice Hamning. It was given to her by her Aunt Margie. |
