  Carrot Cake

  2 Cups Flour
2 Tsp. Baking powder
1 1/2 Tsp Baking soda
1 Tsp Salt
2 Tsp Cinnamon
2 Cups Sugar
1 1/2 Cups Vegetable oil
4  Eggs
2 Cups Finely grated carrots
1 Cup Crushed pineapple, drained
1/2 Cup Nuts, chopped
 
  <p>Sift flour, baking powder, soda,salt and cinnamon. &nbsp;Take sugar, beat eggs in one at a time. Beat well. &nbsp;Add oil, carrots, pineapple and nuts.</p><p>Add flour to mixture. &nbsp;Put in greased tube pan or bundt pan. Bake at 350 for 50 - 60 minutes. If convection oven 325 for 55 minutes.</p><p>Cream Cheese Icing: </p><p>1 stick of butter softened,softened 8 oz. cram cheese, 2 tsp. Vanilla, 3 cups confectionary sugar.</p><p>Beat together butter and cream cheese at medium speed. &nbsp;Beat in vanilla and sugar.&nbsp;</p><p>Topping:</p><p>Mix 1/4 cup finely chopped walnuts and 2 Tablespoons firmly packed brown sugar. Sprinkle on frosting and enjoy!&nbsp;</p><p>&nbsp;</p><p>This recipe was from my friend Janice Hamning. It was given to her by her Aunt Margie.&nbsp;</p>
